My client is a hugely successful 4 star hotel and wedding venue with amazing conference & banqueting facilities.

Due to their continued success and growth my client are now recruiting for an experienced Sous Chef to work within an amazing team!

Purpose of the role
The Sous Chef’s primary objective will be to oversee the running of the kitchen, including food preparation and presentation of all menus. The Sous Chef will also be responsible for managing a team including: Freelance chefs, kitchen porters and kitchen staff. You will be working alongside the Head Chef and may be required to stand in as Head Chef when needed.

To be successful within this role, the Sous Chef will need to display leadership and excellent communication skills, all the while prioritising their workload. The individual will be a self-starter who is welcoming yet professional and has the ability to lead a team. Attention to detail is essential with a focus on consistent quality of product and presentation.

Essential Qualifications

- Basic Food Hygiene Certificate
- Intermediate Food Hygiene Certificate
- Health and Safety in the workplace certificate

Key Responsibilities

- Shares skills and knowledge with staff under his/ her control to establish basic skills and knowledge and develop them according to individual and section needs.
- Assist Head Chef with Menu development and planning
- Provides technical advice and guidance, giving regular and constructive feedback to rectify shortfalls in standards of performance
- Assist the Head Chef with the induction, and in house training of kitchen personnel.
- Ensure kitchen staff will be trained in the correct use of equipment and in the handling and storage of cleaning or other hazardous substances.
- Assist the Head chef by suggesting modifications to systems and practises.
- Utilise allocated staff effectively to perform the best and most efficient service to the customers.
- Control the receiving and calling of orders and their processing ensuring that food is only issued against correct checks or requisitions.
- Minimise waste at all times by the effective control of commodities, and labour.
- Supervise and work with other kitchen team members in the preparation, production and presentation of food to ensure agreed standards are achieved.
- Communicate effectively with staff on all levels including encouraging team members to contribute to the agenda of team briefings.
- Follow all Safety and Hygiene regulations as instructed by the kitchen.
- Complete all Administrative tasks required.

Person Specification

- Must have previous experience working as a Sous Chef Ideally within a Rosette accredited establishment within a 4/5 star hotel property
- Experience of motivating, managing and disciplining staff
- Experience of costing, planning and working within set budgets
- Strong knowledge of Safety & Hygiene procedures within the kitchen
