Sous Chef- private Members Club -Mon to Fri
A client of Greycoat Lumleys has a job for a Sous Chef. The Sous Chef job is available immediately or at the start of 2017, depending on when the candidate is available.
The client, a private members' club, has a kitchen of about eight permanent Chefs, plus temporary ones when it is required. They supply food for the restaurant (fifty covers), a function room and also two private dining rooms. The menu is a la carte in the restaurant and fine dining across the board. The emphasis is on seasonal produce, and British produce is very much promoted within the club. Lunch and dinner served from Monday to Friday, with breakfast only served on Saturdays.
The Sous Chef will be required to work in the team and assist the Head Chef with the management of the team and will run it in the Head Chef's absence. The Senior Sous will come up with new menu ideas, do the ordering, the planning and the stock taking. They will need to be proficient in health and safety and ensure these procedures are carried out through the kitchen. The right candidate will be creative and have some good idea for new menus, still being centred around British produce. Experience in management, either in restaurants, or in functions, will be essential.
A Sous Chef or Senior Sous Chef who has worked with functions would be great for this role. Start: Either ASAP or January/February 2017, depending on the candidate Salary: £26,000 to £35,000 gross per annum Hours: Monday to Friday, some weekend events where required. Shifts are 08.00-16.00, 14.00-22.00. Anything over 37.5 hours is paid at overtime, or as in lieu Package: Statutory holiday; bonus x2 per year, discretionary; pension; uniform provided; meals on duty; annual pay review.
