Sous Chef | Best of British

It is a given that 2017 food needs to be seasonal, locally sourced and as fresh as you can get it. Fish needs to come straight off the boat, meat needs to come from an animal that had a name and veg has got to be seasonal if nothing else. This is a restaurant that takes this mantra and pushes it to the limit.

We need a great Sous Chef with good experience at the appropriate level to join the brigade:

  • Become the right hand man in this small team, working alongside a talented head chef in this genuine "farm-to-table" experience
  • Connected to their own farm where they get all of their produce from where available
  • Help the head chef with maintaining health and safety, hygiene, rota, recruitment, stock control
  • Use contemporary preservation techniques to ensure you get the widest produce range available at all times
  • Daily changing menu means that you get to exercise your creative spirit at all times

Experience is key here, you can't blag it in a high quality kitchen of this size:

  • ESSENTIAL: At least 2 years in either a Junior Sous Chef or Sous Chef position, ideally in a similar restaurant environment
  • Good classical knowledge of cuisine and an in depth knowledge of seasonality and British cuisine
  • Working 4 days on, 3 days off with a good salary package of up to £30,000
