Chef De Partie/Junior Sous - £18k-£20k/£21k-£23k - Outskirts of Chelmsford

My retained client is looking for Chef De Partie/Junior Sous to join their growing brigade on the outskirts of Chelmsford

As a Chef De Partie/ Junior Sous Chef you will have the opportunity to oversee a section of the kitchen, these will include pastry, butchery, fish, sauces, vegetables and so on. Furthermore you will be working with and receive help from a commis or trainee chef. As a Chef De Partie/Junior Sous Chef these modern kitchens offers informal or contemporary menus and generally have two or three sections.

The venue is a recently restored, grade II listed building situated in the middle of the beautiful Essex countryside. Expect to enjoy wonderful food prepared using fresh and local ingredients with timeless classics and innovative specials, always fresh and with one thing in common taste. Everything is cooked to order using as much local produce as possible and served in stylish, relaxed and modern surroundings.

As Chef De Partie/Junior Sous your duties will include:

  • Preparing, cooking and presenting dishes within your speciality
  • Managing and training any demi-chef de parties or commis working with you
  • Helping the sous chef and head chef to develop new dishes and menus
  • Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety
  • Monitoring portion and waste control to maximise profit margins

Ideal Chef De Partie/Junior Sous will have:

  • Great cooking skills
  • A cool head
  • An ability to delegate appropriately
  • Organisational flair
  • A grasp of profit margins
  • Experience working in a kitchen environment
