A "hands on" Restaurant Manager is required to join the management team of this Country House Hotel situated in East Sussex.

The position 'heads up' all food and beverage service within the Hotel and includes the service within their 2 Rosette Fine Dining Restaurant (35 covers), private dining rooms (16-20 covers), afternoon tea, terrace service, plus weddings and other events. The venue is available to hire exclusively for weddings for up to 100 guests and Sunday Lunch (their busiest day) and when they serve approximately 60 covers, plus terrace and afternoon tea.

In this role you will be a key member of the Hotel Management Team supervising a team of 6, plus casual staff on wedding and large event days and the role will include some Duty Management duties too.

You will be responsible for Breakfast, Lunch and Dinner shifts, organising the rota to ensure excellent cover throughout service each day. The hotel offers both an "a la carte" and "table d'hote" menu daily, plus a special Sunday Lunch menu too.

With your team, you will be responsible for laying up the restaurant and private dining rooms to suit the days requirements. Meeting, greeting and seating guests as they arrive, taking orders and payments and generally enhancing the customer's experience of their visit.

You will be responsible for all drink ordering and weekly stock taking, working with the wine & drinks supplier in terms of new stock ideas and requirements.

This role has lots of customer contact and you will get to know regular customers well and by name. You will be the face of the food and drink operation at the hotel.

This position would suit an enthusiastic, professional assistant restaurant manager, looking for their next step up, or a restaurant manager looking to work within a more intimate, fine dining and event operation.

An interest in food & wine is highly desirable and a personal licence and an understanding of drinks GP preferred, but not essential.

You will be working a mix of split and straight shifts, but the rota can be adapted to suit your preference.

Salary to £28,000 + Tips
Uniform will be provided.
