An exciting opportunity to join an established Independent Fine Dining Restaurant located near to Haywards Heath, West Sussex.

Working with only the best and most seasonal, local ingredients you will be leading and inspiring a loyal brigade of 5 existing Chefs all with a passion to develop the Company’s offering yet further. 2 Rosette currently, the team are keen to strive for their 3rd Rosette and perhaps even further with the time and the careful nurturing of their new Head Chef.

You will have the full support and ear of the business owner, who is keen to share food and culinary ideas, but who is happy too to take the back seat and let you drive forward with all things culinary. Their food style is modern British with a Nordic twist, but the focus is always around the ingredients, what’s seasonal and what can be harvested from their kitchen garden.

You will be preparing dishes for not only their 50 seater fine dining restaurant, but will also be catering for weddings and other events held at their very attractive venue. Their wedding and event catering is equally as excellent as their 'a la carte’ menu, quality of ingredients and quality of service being their mantra. The Front of House team are professional and customer focussed and will be a joy to work alongside, ensuring an outstanding customer experience at all times.

The ideal candidate for this role will be from a high quality fine dining background either in a Sous Chef or Head Chef position; be looking to achieve the 3rd Rosette and even more as you are able to motivate and develop the team moving forward; be "hands on", approachable and able to lead by example; have an excellent understanding of the "business side" of the kitchen and to achieving the required margins and GP; to be creative and ingredients led and fully able to prepare and develop menus to suit the ingredients in season; to ensure compliance with HACCP, food hygiene and health & safety legislation and to have passion, flair and drive to mentor and motivate your team and be looking for an opportunity to become an integral part of this family team.

Salary £30,000+ dependent on previous experience.
2.5 days off per week
Excellent working conditions.
