To manage the ordering, processing, stock control and invoices relating to all orders placed, ensuring the smooth planning and delivery of a first class catering product to our clients and customers whilst managing the business needs and performance standards, delivering

Main responsibilities

  • Managing the ordering process for the culinary team
  • To place orders to suppliers that have been obtained through all areas of the business
  • To understand events profiles to ensure over ordering is not taking place
  • Liaise with sales team to get the sales figures from last year and previous events
  • To liaise with Chefs in controlling delivery dates and times
  • Ensure that Compass preferred suppliers are always used when possible. This will involve planning with management team due to day 1 for day 3 ordering process and liaise with our preferred suppliers and maintain a healthy relationship
  • Ensuring POs are filled out correctly and completed for each order
  • Supervision of the Head Porter/Goods In regarding deliveries
  • To update Head of Porters daily on deliveries expected next day / weekend
  • To make sure all deliveries are signed in and checked (quality and amounts)
  • To ensure that the relevant paperwork is completed
  • To deal with any shortages/unsatisfactory goods reported by Head Porter in a timely manner
  • Monthly stock takes for kitchens are completed and submitted accurately
  • Updating any new inventory products for stock takes
  • Removing any products that are no longer used from stock sheets
  • Updating product information i.e. prices, codes etc on stock sheets
  • Complete Monthly Wastage figures and submit with stock take
  • Collating Staff feeding costs monthly and submit with stock take
  • Supporting Information flow in kitchen
  • Ensuring the correct function information is printed and given to the team
  • Making sure that the chef team has the most up to date stand delivery kitchen sheet whilst we are live
  • Collating dietary requirements for events and special menus created
  • Updating the Sales team on any changes to the menu
  • Advising the Sales team on menus, service styles
  • Temporary Kitchens/Service Areas creation
  • Liaising with the Sales/BOH team on chef requirements for temporary kitchens & service areas
  • Liaise with the chefs and staffing team for when additional support is needed as well as KP’s
  • To ensure effective communication, motivation and involving individuals within the team
  • Champion Health & Safety within department, ensuring that correct procedures are being kept
  • Communicating the monthly safety message to the team
  • Ensuring that the Sous Chef has most up to date Food safety forms
  • Completing the risk assessments for Temporary Kitchens
  • Organizing the signage/paperwork for chefs working in temporary kitchens
  • Control HACCAP within the department- ensuring that it is being adhered to
  • Reporting any HSE and maintenance issues with urgency and through the correct communication lines
  • Updating the risk assessments on an annual basis
  • Supporting the Head Chef and Sous Chef in obtaining and maintaining a silver standard throughout the kitchen
  • To personally demonstrate that you are responsibility for your own health and safety and that of others
  • Report all serious HSE and maintenance issues with urgency and through the correct communication lines
  • Completing the initial investigation in serious food safety issues i.e foreign object in food or food poisoning complaints
