Junior Sous Chef - Fine Dining - Guildford - 3AA Rosette
An enthusiastic Junior Sous is required for an award winning fine dining restaurant. The restaurant has an excellent reputation with a modern British style menu. A kitchen that has fresh food cooking and makes all its dishes in house, from sorbets to bread.
The chef required will be creative and innovative to provide menu development ideas whilst working closely with the head chef. You will be required to maintain high quality and consistency with a professional can do attitude.
The chef will be able to work every section of the kitchen and oversee that standards are met. Train and develop colleagues as well as have the student mentality to grow themselves and progress their own career.
The role will involve effectively managing and running the kitchen alongside the current Head Chef, whilst also ensuring that the kitchen meets all food safety and hygiene standards.
The Ideal Candidate:
The successful candidate will have at least 1 years’ experience as a Junior Sous chef with experience in classical cooking. Previous Rosette experience in fine dining is preferable, past experience as a junior sous or Chef De Partie is required as this is not an entry level position and requires a strong knowledge in culinary and menu development.
Resilience and stamina is key as the atmosphere in the kitchen can get intense. A good financial acumen, up to date HACCP and NVQ Level 2 in food production and cooking is necessary.
