Our client a World Class private members Club meets leading 5 Star Country Hotel located near Leatherhead, Surrey, is currently looking for a talented Assistant Restaurant Manager.

Key Areas of Responsibility:
To oversee the Main House Restaurant on a daily basis, ensuring all food and beverage production is prepared in accordance with the company's standards and food safety policy.

Assistant Restaurant Manager duties/responsibilities include:
*To ensure that all guests' expectations are exceeded and memorable moments are provided at all times.
*To be aware of current trends and stay up to date with the hospitality scene ensuring the quality meets and exceeds current and future expectations.
*To be aware and up to date with food and beverage prices in order to run the Main House with optimum profit.
*To ensure all beverage purchases are based on quality product and at the same time working within the designated beverage costs.
*To ensure all beverages are fully costed showing potential costs before placing on the menu.
*To ensure stock rotation is followed by all team members and stock holding is kept to the required amount for the level of business.
*To ensure payroll is managed within budget and on a cost per cover basis.
*To be fully informed of the forecasted business levels and ensure the restaurant is manned according.
*In cooperation with the Head of Food & Beverage to prepare the revenue forecast for the Main House restaurant on a weekly basis.
*To analyse the monthly P&L statement and present at the P&L meeting what is driving the numbers and what the activities are to improve.
*To participate in preparing the budget by agreed deadlines for revenue, payroll and expenses.
*To analyse sales statistics and make recommendations to the Main House Head Chef and Head of Food & Beverage to improve food and beverage sales.
*To prepare Action Plans for the introduction of all new menus.
*To create ideas through promotions in order to attract new customers to the Main House restaurant.
*To ensure teams are appraised annually with care and attention to detail.
*To review Guest Feedback and to communicate any learning to all team members and to identify any opportunities for improvement.

Assistant Restaurant Manager - Job Specification:

Knowledge & Skills:
-Knowledge of financial management processes including business planning, budgeting, forecasting and profit & loss accounts
-Knowledge of current Health & Safety legislation, food & hygiene regulations and COSHH & HACCP

-Experience in a five-star establishment in a similar Restaurant management role
-Experience of financial and commercial development of a business of department

-Smart and presentable.
-Good communicator - verbal and written.
-Confident in dealing with people and Managers of departments.
-Overall an inspiring and naturally positive individual.

This Assistant Restaurant Manager position offers a salary of £27K + Benefits.
