HEAD CHEF HALAL STEAK HOUSE NEW OPENING

Currently undergoing a complete refurbishment that includes a brand new state of the art open theatre grill kitchen, separate prep kitchen, 90 cover restaurant and separate dessert lounge this exciting new Halal Steak House and Grill is now seeking a dynamic professional chef to help launch and run the catering operation and play a key role in the long-term success of the business.

Open evenings only during the week plus lunchtimes at weekends the kitchen will serve steaks (including Wagyu beef), poultry and fresh fish, gourmet burgers etc with everything made in house from scratch. All meats will be Halal, the entire venue is alcohol free. Menus will include signature dishes, daily specials, sliders, sides, salads and desserts with the accent on perfectly cooked quality meats and innovative presentation.

As Head Chef you will be responsible and accountable for all aspects of the day to day running of your kitchen including all purchases, food production, hygiene, staff, stock and the kitchen budget.

Pre-opening you will be required to:

  • Set up the kitchen
  • Create & cost menus
  • Train and support staff
  • Source suppliers
  • Design & Implement the kitchen operating system
  • Head of Department
  • Run the kitchen day-to-day
  • Manage the kitchen team
  • Create menus to delight customers and achieve commercial targets
  • Maintain very high standards of Food, Service, Hygiene, Efficiency
  • Work with the owners to achieve the business’ objectives

The Candidate
The ideal candidates will have several years’ experience as Head Chef in a similar busy fresh food outlet with a proven track-record in kitchen management including a thorough understanding of kitchen budgets and GP’s

Previous experience of new openings is essential

You must be capable of working within set budgets and company financial targets and be competent operating a robust kitchen management system in line with current legislation.

Required: Qualifications / Skills / Experience

  • Passion and enthusiasm for food and quality
  • Confident managing a food turnover in excess of £25,000 per week
  • Knowledge of butchery and Halal cuisine
  • Minimum of 5 years of experience at senior level with appropriate professional qualifications.
  • Fully conversant with Hygiene and Health and Safety best practice
  • Thrives on the pressure of a busy service
  • Excellent kitchen manager
  • Confident, professional
  • Self-motivator

This is a demanding hands-on role that offers a dedicated chef the opportunity to have a real impact on the growth of the business right from the start.

Starting salary: £32,000 to £36,000 + Quarterly Bonus
