Our client has an exciting opportunity for a Sous Chef to join their team at their central production location. Baking handcrafted bread fresh each day for outlets across London, it's not just the ingredients they put in to each loaf and cake that makes their products so special. Key Responsibilities as Sous Chef:
Manage all activities in the kitchen, including production and management of food production staff.
Provide the highest food quality consistent with cost control and profitability margins of the food produced within the kitchen.
Assure adherence to all standards of food quality, preparation, recipes, and presentation in conjunction with the specifications and food standards.
Oversee all food production, staff performance and development within the High Care department.
Co-ordinate activities, times and communicates priorities to ensure correct preparation, and delivery of the product.
Maintain product consistency by monitoring all ingredients, dishes and service standards.
Oversee disbursement of all food supplies, kitchen equipment and resources.
Oversee the controls and ordering of all products required for assembly and production.
Monitor and communicate between kitchen production and management/procurement.
Assure proper safety, hygiene, and sanitation practices are followed.
Ensures readiness and compliance in case of last minute changes to production and orders.
Ensure that all portions are offered in accordance with specifications and recipe guidelines are adhered to.

Staff Management
Manage all food production staff, with the support of all other senior CPU Supervisors and managers.
Utilise leadership skills and motivation to maximise employee productivity and satisfaction.
Challenge and train all employees to achieve optimum quality while minimising cost.
Monitor the department’s overall service, interaction with other departments, and team work daily, and takes action to improve.
Manage all staff in accordance with all Company HR policies & procedures.

Laws, Regulations & Policies
Monitor and ensure staff follows all applicable laws, especially in regard to food safety and sanitation, hygiene and company standards.
Employee Relations Foster and develop effective employee relations between the kitchen production staff and all other departments within the CPU.
Keep effective internal communications, including daily meetings with all staff to ensure optimum teamwork and productivity.
Look for and implement ways to motivate and challenge employees.

Health & Safety
Adhere to all health, sanitation and food safety legislation and make sure all staff follows the regulations.
