Our client is a beautiful 4 Star property set within 26 acres of lovingly maintained gardens and woodland near Guildford, Surrey.

The Hotel is recently under new ownership of a small and highly reputable Hotel group and have just been awarded a 2 rosette rating in their first inspection. They currently have an exciting opportunity to recruit their Pastry Chef to help push the business forward.

The new head chef comes from a strong Michelin standard background working at Properties such as the Hinds Head in Bray and Four Seasons Hotel Group - His style is classics but with a contemporary twist.

The client serves as a beautiful property for leisure, dining, weddings, afternoon teas and conference/events. The restaurant on site operates throughout the week catering for resident and non-resident guests and can seat 40/45 guests currently. There is also a main Bar and Traditional Afternoon Tea is offered each day. There are around 5 meeting rooms catering for up to 70 guests and 3 suites for Civil Ceremonies. The investment into the property is vast with plans for a new pavilion 70 cover restaurant and new induction kitchen among the future vision within the next year.

As the Pastry Chef you will be working in a brigade of around 6 chefs currently but this will be looking to grow to up to 12 as the business demands grow in the coming months.

The Pastry Chef role responsibilities to include:
-Order and stock control
-Designing with the Head Chef menu items for afternoon tea, restaurant as well as banqueting menus
-Producing plated desserts for all menus
-Supervision of junior staff members to ensure consistent standards
-Ensuring work is carried out meeting all food hygiene and health and safety requirements

Previous experience in a quality environment within pastry. Able to demonstrate during a trial shift the practical ability to be able to produce plated desserts to a rosette standard. Demonstrate flair and creativity to develop the hotels Afternoon Tea Menu. Hold the experience to manage the multi menu requirements and busy banqueting operation. The client would ideally be looking for a candidate to run the pastry section so ideally with 2-3 years similar experience would be ideal.
